strawberry sunshine chia compote

There’s not much that can’t benefit from a dollop of strawberry compote. Boring oatmeal? Add some compote. Almond butter toast? Compote. Sad bowl of plain yogurt? Compote. You see where I’m going with this. If you were wondering, compote is just a fancy word for fruit sauce. To make our beautiful fruit sauce nice and jelly-like, you don’t need heaps of sugar or gelatin—just add chia! Chia seeds plump up to make this sauce shockingly jam-like, the perfect consistency for compote.

makes about 1¼ cups

2 cups strawberries, sliced

½ cup water

1½ tablespoons chia seeds (see this page)

1 to 2 teaspoons raw honey

1 teaspoon orange zest

Pinch of salt

In a medium saucepan, combine the strawberries and water. Cover and cook on medium heat for 10 to 12 minutes, stirring occasionally, until the strawberries have softened. Use a spatula or wooden spoon to crush the strawberries into a chunky sauce.

Stir in the chia seeds, honey, orange zest, and salt. Cook for 1 to 2 more minutes, until thickened slightly. Remove from the heat and let cool completely. Transfer to an airtight container. The compote will keep, refrigerated, for up to 4 days.
